So, the other night, I wanted to impress my husband with a dinner that not only tasted delicious, but was low in calorie AND was aesthetically pleasing as well. So, I made this yummy, low calorie dish..which is a PERFECT topper for any salad:
Zesty Orange-Cilantro Shrimp:
Frozen or fresh peeled shrimp
Fresh cilantro (grow it yourself!)
One large orange, quartered
Couple of Cloves of Garlic (powdered will do, but fresh is better)
Sprinkle of Red Pepper Flakes
Pinch of Cayenne Pepper, if you're feely risky
If you are using fresh garlic, cook down chopped garlic in a little bit of olive oil. Once the garlic starts to brown, throw in the shrimp, cilantro, and other spices. Then, squeeze the oranges over the shrimp. Let the shrimp cook, which should only take a few minutes. If you really want the shrimp to soak up the flavor, turn the heat WAY down, and put a lid on your skillet for another minute or two. If you want to keep it low calorie- top a spinach or mixed greens salad with this shrimp concoction....you won't be disappointed! You don't even need dressing, just use the yummy citrus liquid left in your skillet!
